Bel Canto is a squat creamy, ash-ripened goat's milk pyramid from acclaimed cheese maker, Soyoung Scanlon, at Andante Dairy in Petaluma, California.
Andante Dairy makes goat's milk, cow's milk, and seasonally sheep's milk cheeses. The goat’s milk comes from the dairy farm on which Andante is operated.
All of Soyoung’s cheeses are named after musical terms, e.g. Adagio, Rondo, Minuet, Piccolo and Nocturne to represent her love of music. Bel Canto literally means: beautiful singing.
All of Soyoung's cheeses are worth taking pause for, to savor and appreciate. She is unarguably one of the top US cheesemakers.
Joanne's Tasting Note:
Subtle clean goat smell. The pate is chalky white uniformly to the rind and dense. The ash mold is subtle – just slightly coloring the ridges of the rind. The rind is thin and doesn’t separate from the pate.
The pate has a chalky mouthfeel with a pleasant chewiness to it. It is slightly grainy on the tongue and leaves a lemony like acidity through the midnotes to the aftertaste. The texture has weight to it. The rind adds an earthy element with just a hint of acrid on the finish, which seems great with the acidity. I like a bit of the rind with a bite. There is a definite mineral element but it’s integrated. Very balanced.
