I've been waiting so long for Paul Bertolli's (formerly of Oliveto) new charcuterie company to come online that I almost can't believe I have one of the first 3 products in my hands. A much larger roll-out is expected in June – can't wait until his Mortadella and Sopressata are available. These plump sausages come in classic or spicy Italian and are packaged with a bay leaf. Yum! The Mortadella and Salame Toscano are the current house favorites but we also love the nostrano and sopressata.

You'll likely have to go Stone Barns (in - Pocantico Hills, NY) to get it (they have a farmer's market and CSA program). If you don't know about Stone Barns Center for Food & Agriculture, a non-profit farm, educational center and restaurant (Blue Hill at Stone Barns) in Westchester County, NY you need to. Their mission is to demonstrate, teach and promote sustainable, community-based food production.

Hobbs of San Rafael, CA's meat products are good quality and seem to be consistent - but I don't know their sources of pork. This bacon tastes wonderful. It cooks up without too much shrinkage and you can get it crisp without burning it. We've recently also tried their smoked pork loin and liked it. They are one of the suppliers to the French Laundry. We buy it at Dean & Deluca.

Domestic Caviar

Tsar Nicolai Caviar
They are pioneers of domestic sturgeon farming their farm is in Wilton, CA. All of their caviar comes from sustainable sources.

Sterling Caviar
Sterling Caviar based in Sacramento, CA is one of the only American producers of premium farm-raised sturgeon caviar.

La Quercia Artisan Cured Meats
We've only managed to snare proscuitto so far, from this artisan charcuterie house but we are about to be proud owners of La Quercia Rossa - Heirloom Breed Culaccia. You can order from them online. They use Berkshire Pork ae Slow Food supporters.

Salumi Artisan Cured Meat

Owned by Mario Batali's father Armandino Batali in Seattle, WA. They have teamed with Heritage Foods USA to release Berkshire Pancetta (cured pork bellies) and Guanciale (cured pork jowls). They are interested in supporting sustainable and humane farming.

D'artagnanD'Artagnan
We are long-term fans of Ariane Daquin's D'Artagnan, located in New Jersey. They self-proclaim they are "dedicated to putting the finest foie gras, meat, game, truffles, and mushrooms on the tables of American gastronomes..." and supply many of the top restaurants. They offer free-range organic and heritage meats as well as preservative free charcuterie and are also a source for truffles. Plus I love their Glorious Game cookbook.

Boccalone
Chris Cosentino and Mark Pastore of Incanto have begun a new salumi venture called Boccalone. Boccalone is the Italian slang for “big mouth." They offer a monthly plan: "Modeled after farm CSAs, the Salumi Society will provide members with a package of our meats twice a month." We had a chance to pre-sample some of the his fantastic salumis at Golden Glass 2007. Oink-azing.

Located in Ferndale, NY. They farm Moulard Duck from which Foie Gras is produced. Producers of Award-Winning Foie Gras and Other Delectable Duck Products and one of the major sources for Foie Gras on the east coast.

Sonoma Saveurs Duck ConfitSonoma Saveurs Artisan
In Sonoma, CA are our local west coast Foie Gras and cured duck producers. They raise free range Moulard ducks on a farm in northern California. We fans of their Smoked Magret and Duck Confi


Grimaud Farms
Based in CA's San Joaquin Valley Grimaud Farms is the US counterpart of Groupe Grimaud of France is famous for it's Muscovy duck products (like duck confit, and smoked duck breast and duck proscuitto). They also offer Guinea Hen.
