One of Saturday's Healdsburg's Farmers' Market best secrets is that Santi Restaurant in Geyserville sell a selection of house-made charcuterie (mostly sausages) on Saturdays (May–Nov). The selection varied from week-to-week.
Our first purchase were the Frankie Dino Natural Pork Breakfast Sausage and the Pancetta (which I used to make Summer hot slaw).
The Pancetta was a bit spicy and salty on it’s own. We would buy both again.
